Leftover Ingredients

I had some leftover ingredients from several other meals and kept thinking they would go well together, but I couldn't quite figure out how to get them together in a good form. Well, last night I figured it out, and I think it's a keeper! Here's what I had: bacon, gorgonzola cheese and zucchini.

So I chopped the bacon into pieces and fried it until it was crispy. Then I mixed the bacon pieces with gorgonzola (approximately equal parts of each, though maybe a little bit more cheese than bacon.

Then I sliced the zucchini (they were small ones - about an inch and a half in diameter) into about 1 1/2 inch slices. I used a spoon (since I was too lazy to find a melon-baller, though I thought that would be ideal) to hollow out a little cup from the zucchini. I filled the cups with the bacon/gorgonzola mixture, and then baked them for probably 15 minutes at 350 in the oven until the zucchini was cooked. Then I turned on the broiler for a few minutes to really melt the cheese on top and get it a little crispy.

I thought they were very tasty -- something to keep in the "hopper" for hors d'oevres in the future!

Yummy! And I don't even like zucchini...unless it's concealed in spaghetti sauce.
