Note to Self: Espresso Caramels Recipe, and a granola bonus for the rest of you

My posting here has gotten so sporadic that I'm not sure anybody reads my blog anymore, but this is mostly a note to self anyway. I came across this great-looking Espresso Caramels Recipe that I'm eager to try sometime this Christmas season and wanted to make a record of it here.

Also, I've now made this granola recipe twice and I'm a big fan! The only things I did differently in take two were: less salt, more vanilla, I used 1 Tbs. coconut oil in place of canola oil, and I added the almonds right away so they'd get some of the yummy sugary coating on them. Oh, and both times I used craisins instead of raisins, a) because I prefer craisins, and b) because I didn't have any raisins so I couldn't use them if I'd wanted to!

If you've never made your own granola, I highly encourage you to give it a try. It is SO MUCH cheaper and generally healthier and more delicious than the store-bought stuff.
